Authentic carbonara is an easy Italian dish to make and only has a handful of ingredients - egg yolks, guanciale, Pecorino Romano, black pepper, pasta water and spaghetti

- 6 Egg Yolks, medium sized eggs
- 150 g Guanciale, cut into strips (5 oz)
- 50 g Pecorino Romano Cheese, grated (½ Cup)
- Black Pepper, to taste
- 400 g Spaghetti (14 oz)
Boil water in a large saucepan for the spaghetti
Add the guanciale to a pan and fry for 10/15 minutes, no need for oil as it will cook in its own fat
Mix the egg yolks and Pecorino Romano cheese together with a whisk to make a think paste and add black pepper to taste
Once water is boiling add spaghetti and cook as packet instructions
Before spaghetti has finishing cooking add a table spoon of pasta water to the egg and cheese mixture and stir in
Drain spaghetti, but save the pasta water
Add the spaghetti to the guanciale and stir in
Then add the egg and cheese mixture to the spaghetti and mix in
Add another tablespoon of pasta water to the spaghetti mixture and mix in
Then your Spaghetti Carbonara is ready to serve
